Apple and Fennel Salad with Agave and Orange Vinaigrette and Cashew Cheese

Fruits, vegetables and nuts make the basis of a well balanced raw regime. And what better way to combine these three elements than in flavorful apple, fennel bulb and cashew gourmet salad! This colorful recipe, infused with stunning aromas of oranges and freshly chopped herbs, makes for a delicious and exotic lunch or dinner.

Packed with valuable nutrients, fennel is a rarity among vegetables, in that the plant can be consumed almost in its entirety, with each part conveying its own subtle flavor and texture. Although fennel is a hardy, perennial plant that can be added to numerous dishes, it hasn't grown to be that popular in North America, where it is sometimes even considered a weed.

Along with anise, fennel leaves were one of the secret ingredients of absinthe - the famous alcoholic beverage that became popular with 19th century European and American artists. Nowadays, fennel seeds and leaves are often used as spices in oriental cuisines, and are well appreciated for their digestive and breath freshening properties. The fennel bulb and stem are used extensively in the Mediterranean cuisine, as an aromatic addition to salads, vegetable dishes and sauces.

Fennel has carminative properties, meaning that it prevents the formation of gas in the gastrointestinal tract, and an used to treat babies with colic. On top of that, fennel is a powerful diuretic, it can improve a breastfeeding mother's milk supply, and can even treat chronic coughs.

Cashews are rich in vital micronutrients, inducing minerals like manganese, magnesium and phosphorus, but also vitamins of the B complex and essential amino acids. Cashew cheese is dense and easy to prepare, making it a wonderful substitute for cow's milk cheese. What's more is that it usually keeps in the fridge for many days, meaning that you can prepare it in larger batches!

Equipment Needed: For the Vinaigrette:

Ingredients: Directions:
  1. Blend all ingredients except diced shallot.
  2. Pour mixture into a bowl, stir in diced shallots and set aside.
For the cashew cheese:

Ingredients: Directions:
  1. Process all ingredients in food processor.
  2. Press the mixture together well and place in the fridge for a couple of hours.
For the Salad:

  • 1 thinly sliced apple, with skin
  • 2 thinly sliced fennel bulbs
  • 1/2 cup coarsely chopped macadamia nuts
  1. Toss the apple and fennel slices in the vinaigrette, then layer onto a plate, alternating apple and fennel slices.
  2. Crumble cashew cheese and sprinkle onto the apple and fennel slices.
  3. (optional) Top with ground black pepper.
  4. Serve and enjoy!
